Greetings,

I jumped ship after being a long-time Chrome user; now I'm using Safari . Does anyone have any tips and tricks, and what extensions I should install or not?
 
No real tips and tricks. You have to pay for most extensions so things like Sponsorblock or Dark Reader are not free anymore.

My only recommendation is to try the “hide distracting items” feature. Pretty good albeit with some limitations.

Yes it can look daunting! The defaults are fine. It's the best Safari extension I've used to block Youtube ads, and offers a better player. It includes all Apple devices and can sync settings through iCloud.

Vinegar also removes Youtube ads but not always. :)

If you like to darken web sites in Safari at night, try Dark Reader and Noir.

Edit: Wipr is a great ad blocker, as bob_zz123 suggested.
