I finally decided to Jailbreak my Touch. All is well, and my iPod is syncing everything back.

Now, can anyone please tell me some how this works? How do I get 'custom' applications? Sorry if this is a newbie question.

Also, will restoring my iPod, bring it back to the old fashion official firmware? Like when I first bought it?

Depends on Hw u did the jailbreak ,if u used winpwn and selected 2 install cydia and installer app then al u need to do to get apps is find a wifi connection n use either cydia or installer app to download apps.all apps are sorted into groups for convenience and to ur question about restoring ,the answer is dependin wat firmware u use for the restore process your Ipod wil be restored to that version, hope i helped u :)
