I have Snag-It for Mac, and used to have Command + Shift + C defined as the way to do a screen capture.

Well, I was futzing with things this weekend, temporarily redefined things, and now I cannot get things back to my original custom setting.

This leads me to believe that there is a "collision" with some other shortcut.

So is there a way that I can see how all shortcuts are mapped on my Mac?

I have Mountain Lion and am on a MBP.

Here is the official list from Apple. In the KB shortcuts panel in System Prefs you can also click restore defaults.

Is there some place where I can go to re-map one or more of these??

For example, in SnagIt I want Cmd + Space Bar to pause a video recording and not fire Spotlight...

You should be able to configure that as an application keyboard shortcut in the keyboard preference pane. See this.
