If I simply drag my main internal hard drive icon and drop it onto my external hard drive icon to do a simple Finder copy operation, what do I not get that SuperDuper or CarbonCopyCloner do give me? Do I simply lose bootability? Or are there actually some things that don't get copied?

If you do that finder copy with your "user X" you are copying only what is accesible to that user.
The other solutions copy all, and make perfect clones of your HDD Volumes.
If you are using Leopard you also have Time Machine.

I'm still a little unclear on this. My user is an admin account, so shouldn't everything be accessible to me, and thus part of the copy?
