Is this not an option on MacOS? I change the font size in a window from 13 to 16, click "set as default" but no other finder folders change; I have to change them all individually one by one.

Is there another option..?
 
I think this might be a bug. I like my folders to default to list view sorted by kind, and after installing Tahoe (at beta 3) it reset my default (and overrode any individual folder configs) to list view by name. Trying to revert back and set list by kind as default has not worked, so likely the same bug as you’re experiencing. Setting individual folders works fine, with those folders retaining settings - just the global defaults is not working.
 
Been an issue since Sequoia at least. Finder HATES remembering view settings. Somehow Apple has regressed to before 1984. But don't worry, they've downloaded 10GB of useless LLM garbage!

I believe Finder has had problems with default folder view settings ever since Mac OS X debuted. Certainly has in all my time using it since MacOS X Tiger.
 
Make a script to delete all the existing .DS_Store files, if the folders already have some custom settings, the default won't be applied.

I for one use list view in finder and it always loads and uses that thought finder even after I reset computer. my only issue is with safari tab favorites, have to open side bar and select from list.
