Finder keyboard shortcut not sticking.

I tried to set Finder's 'Open With > Other...' command to ⌘⇧O, but if it even works the first time, it will revert back to sending me to the Documents folder after not-too-long.

For the shortcut, the Application is set to Finder, and the Menu Title is set to 'Other...' (I've also tried 'Other', without the ellipsis).

Has anyone had this problem before, or know of some generic keyboard-shortcut troubleshooting tips? Any help is appreciated.
