Finder remembers folder view settings on my Mac just fine. But on a external drive formatted in exFAT it does not. Would deleting the .ds files on the exfat drive fix that?

This is a Finder limitation. Finder remember settings on a Folder by Folder basis. I can set the perfect setting for the finder icon, but if create and open a new folder on my Desktop or open a folder from an external drive it will be whatever size it was last or was the default.

If you've already set the folder setting your trying to open form you drive then deleting the preference list and resetting it may help, but I generally find this a shortcoming with the Finder itself. It sometimes chooses not to remember settings for me either.
