Before doing the Mac OS update earlier today (thereby upgrading Finder), I was able to use the shortcut shift+cmd+period to show and hide system files (hidden folders). This option was also accesible through the top "View" menu.

This menu option is now gone and the shortcut no longer works.

Any workaround to this?
 
Those are features of third-party add-on "Total Finder", and have never been available in the vanilla Finder AFAIK.

Are you sure you weren't running that before the OS X update?

Yes I've been running TotalFinder for a while now and it did give me a compatibility warning after I rebooted after the update. Everything seems to work fine but I guess this feature isn't compatible.

No problem; so, it's not really a Finder problem, but a Total Finder problem. I've been using TF since it's beta days, and updates have always come promptly. Hopefully a 10.6.7 version will be along shortly.
