The displayed data changes back to EXACTLY what it was before I made the changes.
Assuming it didn't save, I again select View/Show Preview Options and the options window shows exactly what I previously selected - and the displayed data also now shows correctly. I close the Window and it reverts back again. So the only time I can see the data I want to see is when that Preview Options window is open. Close it and it shows what Apple decided.
I check in another folder and I have been able to add a couple of metadata items and they are displayed. Open that options window and the display changes to match the checked selection (same items checked as in other window). Close the options window and the displayed data changes back to the previous selection of data, that is still not the same as the other folder of images - albeit those were PNG and these are JPG, but both are identified as 'images' so should display the same.
So I have 2 folders of different images showing different data under the preview, but I am unable to change that choice of data displayed since whatever I choose to show, it just reverts back on closing the Show Preview Options window.
Either this is a stupid fault in Mojave, or I'm not understanding how to set these Preview Options, foolishly believing it would be the same as setting View Options - open the relevant options window, choose what you want and close it and that should be what you now see.
Irritations aside, anyone any suggestions?
