I have the latest version of Firefox and have set it up to store history for 7 days, but I still have stuff from months and months ago. I went into about:config and even in there, it says browser.history_expire_days.mirror is set to 7.

Is there any way to fix this?

Did you change the setting after having already a large amount of history built up?
 
Grab PlacesCleaner from the Add-ons site:

You can configure it all sorts of ways to help with the growing history. Unfortunately Mozilla decided that they would keep history based on the hardware of your computer, so different people have different settings. With the above extension you can automatically remove history based on criteria you set. For example, I have mine set to remove items over 2 months old that I have visited less than 5 times, and it does this every 7 days.
 
So FF overrides my settings because it thinks it knows better than me? Dick move much?
