The Windows versions of the Firefox browser and Thunderbird email software allow you to customise the toolbar by adding and removing icons, it also allows you to change the size of the icons and whether they have the descriptive text beneath them. Do the OS X versions allow you to do this too? Particularly Thunderbird. :)
 
I can't speak for Thunderbird since I don't use it, but Firefox allows you to do everything you mentioned, and I would expect Thunderbird to do the same.
 
Thunderbird allows you to do that as well. See attached screenshot.

To get to the screenshot posted above, either right-click (command-click) on the navigation bar, or you can go through the menus: View -> Toolbars -> Customize.
