It appears that FireWire Target Disk Mode is still supported on the new Intel-based Macs, even though they lack Open Firmware. 
I thought I had heard news to the contrary, but Apple released a list of startup key combinations for the new machines, and there it is. I feel that Target Disk Mode is one of the great features of the Mac and I'm glad it's not going away (yet anyway).
