iPod touch Firmware and Restoring a Secondhand iPod Touch

Background: I am in the market for an ipod touch--one with the 1.1.4 updates.
Concern: If I later need to restore software for some reason (or even just restore it when I receive it to be safe), would it revert back to what firmware the Touch shipped with? Does anyone have experience with this?

Ebay's your best bet...

Also, if you restore, iTunes will automatically restore you to it's latest firmware, or you can tell it to restore to any firmware you have on your hard drive.. not sure how to do that though.
