First time connecting to iTunes with 3.0

I just updated my iPhone to 3.0. Everything seems fine with the phone. Now the iTunes screen says:

Set up your iPhone
An iPhone has been previously synched with this computer
o Set up as a new iPhone
o Restore from the backup of: Galahan's iPhone

Which do I choose? Is the synch only for music and apps or also for the OS?

Note that I'm not having problems with 3.0, I do not want to downgrade. If I can restore my music and stuff then cool, otherwise I'll just do it manually.

I would set it up as a new device. I originally restores from backup and ran into some issues (youtube not working etc) and when done as a new phone... pretty much problem free.
