So I wanted to test the backup feature on my iPhone now that I updated to iOS 6 and I had a few questions about it.
I checked the config options and I noticed there are a lot of settings for the things I want to backup, now as soon as I turned it on it showed me a message saying that if I enable this the phone won't perform the backup when I connect it with iTunes, but I still will be able to sync my media right?

Also if I turn off the photo stream from backing up and I do not backup my Camera Roll and Camera+ photos can I still back them up into my pc?

Now I just completed my first backup and I only chose my contacts, calendars and reminders, along with some other documents. I'm planning on switching to a new iPhone, so when I boot it up and enter my account I will be able to sync those settings and documents right?

Sorry if this all sound a little newbish but I wanted to change to iCloud cause it has happened that I don't have access to my computer after performing an upgrade to my OS, like this time that I made it in my office hehe, and I would like to have my settings and contacts in the cloud so I could restore them over Wi-Fi if I need to.

Thanks for your time!
