Well today I finally fixed the problem with my crashing apps on my iPhone with my Macbook Pro.
I have been having HUGE amounts of problems with apps crashing, and the other day some of my purchased music wasn't playing also (it wanted me to keep reauthorizing my computer, even though it was already authorized).
My Solution:
Open a Finder window
Go menu -> Go To Folder (yes you need to do it this way)
Enter to go to the folder '/Users/Shared/SC Info' (no quotes)
View menu -> Column View
Drag SC Info folder into the Trash
Restart Computer
Open iTunes
Reauthorize your computer
Plug in your iPhone and resync
It should then work (well it did for me).
It was a problem with the authorization that was stopping the apps from opening (they would go to open, but after a second or two they would simply close back to the home screen).

Here's something funny about this - I contacted Apple about this problem last night yet again (I had previously been on the phone to them a month ago MANY MANY times), and was speaking to a Product Specialist, and he told me that I just need to download the apps from my iPhone, instead of from my Computer, and wait until the 2.1 update comes out. I had even explicitly told him that I think it is a problem with the iTunes authorization, but he didn't attempt to do anything about it. Well this is certainly a big case of "I told you so".
