So i noticed today that my gig memory stick actually only held something like 250 megabytes, and i know that there's never as much memory as is said (111 instead of 120 gigs, etc), is this right? to have only 1/4 of it?

With the flash drive mounted, have you emptied the trash? Just dragging stuff from the flash drive to the trash doesn't remove it entirely...it just moves it to an invisible trash folder on the flash drive. Just like with a hard drive, you have to empty the trash in order to truly get rid of it and free up the space.
