When I'm on YouTube, Google Videos, etc. etc., I have a problem with the video playing in Safri. As long as the window is in focus, it's fine, but once the window looses focus the video gets VERY VERY jumpy. What gives? If it was pegging the CPU, I could understand -- but its not.

I think it has to do with how Safari handles Flash (Or maybe flash itself)..My machine does this with other things, not just videos. When a window is not in focus, Flash simply slows down.
 
You can find your answer here from one of the Flash developers.

As stated in the article, Safari intentionally cuts the frame rate when it isn't the frontmost application in order to preserve system resources such as battery life and otherwise unnecessary fan usage.
