I never use quicktime to view videos, I use Miro as my regular video player, and I have VLC as a backup when Miro can't play a particular file format.

I seem to have downloaded Flip4Mac at some point though, and I was wondering if its still useful if I don't use quicktime.

I've been told that flip4mac was made for quicktime, so I have no idea if it affects any other video playing software, and if it has been working on videos that I've been watching all this time and I just haven't realized. I just don't want to delete it and realize it's been doing something worthwhile all this time.

As stated above FFM is for playing WMV files within QT. If you don't need that functionality, and don't feel like you will in the future You can delete it without issue.
