Nope, just tried it, you can't

i tried it on my ipod touch with iOS GM, and when i tried to put a folder in a folder, they just repel each other like magnets and the folder refuses to go in the other...

unfortunately not...the 12 items per folder is a bit poor really so I'll be glad when its properly jailbroken!

I think nested folders are a little bit outside Apple's tolerance for user-friendly design.

Maybe we'll get this functionality through a jailbreak hack, but I'm not sure how well it will work...
