Font colour in Mail?

Anyone know how to make the font colour the same every time you send a message in Mail without having to go into Fonts and Colours and Format each time? This has been bugging me for months Thank you in anticipation of a clear explanation.

Did you check the preference settings?

Not at my Mac now, but think there is place to set your default settings....

Yes ...... The colour box is showing green and it won't change. The text is black btw not green.
