I see to many Chinese and others non ENG fonts in Illustrator. Is there a way to get rid of them? I cant stand having them overpopulating my Font list in Illustrator.

Take a look at this thread. Long story short, there's almost nothing you can do about it in most apps. Adobe apps do allow you to filter fonts, but it's a pain in the arse. Look for the filtering options in the Font menu.
 
are you hunting around the font list a lot? I never go into the font list to explore fonts, only to select what I know I am looking for. I use font management software for keeping all my fonts and activating what I need, I also use Adobe Fonts so activating through he Adobe CC hub. I would recommend finding some font management software and using that rather then trying to find the right font in the application.
 
Nobody said anything about "exploring" fonts in the Font menu. If you have to change a font, you have to go into the Font menu, and if the font you want to use is below the Noto fonts, you have to scroll forever to get to it. And having to scroll through a bunch of Asian fonts (when you never use them) is highly annoying.

No font manager can fix this problem because the fonts in question reside in the System which cannot be edited or messed with in any way due to Apple's insistence on locking the System down for safety/privacy concerns. It's the one thing I miss about older versions of the macOS.

If I go to my font list in Illustrator I start typing out the font I want and it goes right to it. I don't have to scroll forever unless I am looking for a font I don't know the name of.

Mmmkay, well, everyone doesn't work the same way you do - so the issue @zoran brought up is an issue for a whole lot of folks, particularly designers with hundreds of fonts loaded at any given time.
