For the average user, will the Intel Iris-Pro on the new iMac 21.5 be ok?

I will be getting a new iMac. I am an average user (email, Internet, photo viewing, word processing ). I don't game. Will the integrated Intel Iris Pro Graphics be suitable?

Yes, it'll suffice, 16GB RAM upgrade is recommended though, not sure if you'll ever need it but the RAM cannot be upgraded (well, it can be but it requires you to take it apart) at a later date, so you'll need to configure it before ordering.

Yes. Iris Pro is 10-15% faster than the GT 640. I wouldn't worry about it.

And it's much, much faster for anything GPGPU.
