I use my watch mainly for running, biking and hiking. I'm thinking about upgrading to an Ultra, but I was wondering about cellular enabled watches.

When I'm running or on my bike, I don't want to receive emails or texts, phone calls might okay: ICE. Is there a way to not let emails or texts go to my phone when using it for workouts? Or, is there a way to NOT have the mail app or messaging on a watch period?

You can do either of your choices. If you set up a workout/fitness Focus, you can tell it to block messages, emails, phone calls, app notifications, whatever you want, and it will stay that way until you turn the Focus off. You can even get more granular than that and only allow messages/calls from certain people or notifications from certain apps to go through, if you want to.

For general everyday use, you can choose exactly what notifications you want to receive on your watch - if you don't want messages, mail, phone calls, etc., you can turn them all off.

I don't have mail on my watch, never saw the point.
 
Put a PIN on your watch maybe.

I have all mail notifications turned off. I do get the occasional text message to my watch but it's never an issue when running.

Two mantras for using the watch, in my opinion:
* Turn on a PIN. This is absolutely crucial.
* Turn off the majority of notifications.


But when I'm running a notification does pop up it doesn't stay on the screen. I'll have the workout screen active and it's a momentary interruption while the notification displays, then the watch switches back to the workout. You won't be running while looking at the watch 100% of the time anyway, so you might find it a bit of a non-issue in reality, unless you're getting text messages every few minutes.
