I'm in a remote area at the moment and tether the internet off my iPhone but I can get 3 bars of 3G every so often in the same spot I'll have it and it'll switch back to GPRS. I then have to go into aeroplane plane and then turn it off for it to go back onto 3G. Is there anyway of forcing 3G?

Nope,

you just must not be in a strong reception area and unless your service provider adds another tower near by, your stuck with what you have.
 
I've always thought that Apple should add a feature that resets your networks and tries to resync with networks.

Isn't that the point of this setting?
