2 of my apps, Grindr and Carminder, backup data reliably to iTunes, but they lack import, export functions, and grindr's account sync apparently hasnt worked since november.

Normally, this wouldn't matter, but I was tracing a bug with ungodly high cellular data usage, even thought usage patterns havent changed, and needed to se the phone up as new. I jailbroke with evasi0n (which was a very clean and simple process), manuall extracted the app databases, restored the iphone, jailbroke again, installed the apps and manually uploaded the databases again. Carminder wont let me assign vehicle icons anymore, but otherwise all is good. (strangely, the phone is FAR more responsive now too.)

I haven't jailbroken an iPhone before, and normally I could live with or without it, but because of crappy app developers, I want the option to manually screw with the file system again to prevent data loss.

My understanding is that SHSH blobs need to backed up so future ios updates don't lock me out of my cell network, lock me out of my phone, burn down a school, or something terrible. Tiny umbrella doesn't work for me because I refuse to install java on my system. How else can I do this?

You could try http://savemyblobs.com/ but that just recently launched, so it has never actually been tested to save usable blobs. If you really don't want java, that's your only choice.
