How can I get french specific apps like Canal + and HBO Now on my Apple TV (4th gen), when I live in France but have a Norwegian app store account?

It sounds like I would lose my apps in the purchased section if I just change the country, and I have hundreds of expensive apps.

Any advice?
 
You'll need 2 Apple IDs. The new one for French. And you swap store whenever you want, but can't have both on at the same time.

So when I switch between the norwegian store to the french store, do the apps already installed on the apple tv disappear?

No. All apps will be there (both Norwegian and French). You swap stores when you want to update apps, or buying new apps from another store.
