I just got mom an M1 MBP with Big Sur. To see what Apps would break, I first installed my backup onto it (and it does look like a lot broke). So now, I would like to do a fresh install of Big Sur and give the machine to her.
While I found several instructions on how to perform a clean install of Big Sur, they all advice using a USB drive and format it to Mac journaled. However, both on the M1 with Big Sur and my current mini with Mojave, I only have APFS as an option. How do others get around this to do a clean install?

Ah, found my issue. I was in the wrong "level" in selecting the entry in disk utility
