Would doing this be pointless? I'm kind of thinking it would "format" the iPhone, and then the backup will just restore all the data. Should I not bother? Performance and stuff is fine, just thinking maybe it could be better.
 
how long have you had your current install?

from ios 3 to 4 i noticed the restore is only the app settings and a few other things. in the end it still installs the apps. also noticed that music syncs a lot faster after a restore, probably because the file system fragments after a few months
 
Everytime I restore I always setup the phone as new. You'll lose some information in the process however it just feels "better" starting off from scratch. Some people will obviously have lots of important data like game saves, SMS's, etc., but most things you can live without depending on your needs.
