Ok, i've bought a 2017 iMac few days ago and i've now a very good opportunity to buy a 2020 27 imac... 32gb but 256Gb and 5300 pro in it. I can buy it for 650$...
Do you think it's a good deal ?

Same feeling. I'm just thinking that with a good TB3 / usb c 40gbs to complement... Should be good
 
If the only reason you are buying it is because it is a "good deal," then don't. I've wasted a lot of money getting "good deals" so I don't do them any more.
If it is a 5300 GPU, then the CPU is probably an i5, which is mediocre. This is a bottom spec machine

Do you think the fact taht it's a 2020 model, so more MacOs support, better connectivity, etc.. worth the case compared to my 2017 ?

Yes it does.
And you are alright... I was tempted because of the 'good deal' but I finally decided to do not buy it.
The soldered ssd is a deal breaker for me and I would rather buy a i7 7700 and have fun upgrading my 2017 instead.

1. CPU:
Comparing a 4-core-8-thread CPU (core i7-7700) to a 6-core-12-thread CPU (core i5-10500) is quite unfair.
2. GPU:
Your iMac 2017 might have more powerful GPU (RX570 or RX580) than the AMD Pro 5300 (pretty weak)
3. LCD panel:
iMac 2020 is 3 years newer than iMac 2017, and less prone to the pinky edge syndrome of iMac LCD panels.
4. Storage
It will require less labour and risk to add an external SSD to both iMacs, with not much speed-drop experience in real-life.
5. Economy value
I would list my iMac 2017 for 450$, and buy the iMac 2020 after selling.
6. GPU power
Isn't it possible to use EGPU on the thunderbolt port of iMac 2020?

Cpu wise my current i5 3.4ghz quad core is okish. I will upgrade to an i7 if I find a good deal. Not especially the k version.
I've the 570 pro. Totally OK for me as I don't do any game or 3d.
Memory, plenty of space.
Ssd. I've upgraded yesterday with a 950 pro nvme. Not the fastest but I had a spare blade of 512gb. I too the opportunity to clean all the inside and remove dust from fan etc... I'm totally OK to open and close back the imac.
Egpu is useless for me.
Pinkish surrounding is totally absent on my model. I've a 2015 that is impacted but on my 2017, as it was really not used a lot, whites are whites.

So at the end, I'm really happy with my 2017... And won't upgrade to the 2020.
