I usually prefer full websites on my iPhone to the crabbed, cramped, incomplete versions that are designed specifically for mobile use. At best, though, I have to click a button on the page I'm viewing. At worst, there is no button, and I'm stuck. Is there a way to get the iPhone to stop identifying itself to websites as a mobile device, or to toggle this?

Not in Safari, but you can in iCab or Atomic Web Browser.
