I am looking to sell my wifes iPhone 4 and my old iPhone 4s...Both phones have the power button issue.

How can I ensure everything is removed from the phone, and that the iMessages will not go to the phone once a new owner activates it?

I got a little weary of this last night...When I was searching online as to why I couln't text my wife from my iPhone 5, to her new Android device (It kept trying to send as iMessage).
 
turn off imessage first before wiping the phone , when I changed to iphone 5 I turned off imessage 24hrs before hand then wiped and restored it
 
^^ Yep. Before restoring/resetting, go to Settings > Messages > Turn off iMessages.

Although, apparently, this issue has been fixed a while ago, it doesn't hurt to do this extra step.
