I have a 250GB 2.5" Crucial M500 SSD & 2TB 2.5" Seagate Firecuda ST2000LX001 SSHD. Is it possible to take advantge of the 8GB of NAND of the Firecuda when I combine the SSD & SSHD into a Fusion Drive?

Yes The NAND on the SSHD is "Internal" thing, virtually transparent to the OS. Therefore, the NAND will still cache some data to speed up the loading.
