I have read that the 3TB option will not allow you to use a bootcamp partition.

Boot Camp Assistant is not supported by Apple for hard drives larger than 2.2 TB. If you purchased a new iMac with the 3TB option (either with a Fusion drive or just a standard drive), Boot Camp Assistant will refuse to partition your hard drive into a Mac and Windows partition. However, it is still possible to create a working Boot Camp partition for Windows, provided you use the partitioning scheme as outlined in this tutorial.

Getting the 1 TB or the 1 TB + Fusion drive will be fine for bootcamp.

Do not get the 3TB option.

There are work arounds for the 3TB fusion drive if u look around people have said how to do it. If u have to have a 3tb hard drive

Bootcamp Assistant won't allow you to partition - but the link I provided above details the workaround so you CAN partition the 3TB.
