Garageband Help (possibly a stupid question)

Hi,

I'm relatively new to using instruments on Garageband, I've been doing so recently and one thing that's been bugging me is how some (seemingly random) notes will continue playing for longer than they're supposed to, while others behave perfectly.

Any idea why?

Also, when using synths, why is it that some seem more like individual notes whereas others sound like one getting higher and lower in pitch... Really don't know how to explain it, that's the best I can

Any help to offer?
