I've been using GarageBand with two-channel audio interfaces for a few years now and I'm ready to move on to an interface that will allow a little bit more freedom. I'm looking for something that will work with GarageBand and allow me to bring in 4-8 channels simultaneously, but still let me give each channel a separate track.

For example: I want to mic a up a whole drum kit and give each mic it's own track in GB.

Any ideas/inexpensive hardware that does the job?

There are a lot of them. You are pretty much looking at Firewire and a 1U rack mount form factor. Here is one http://en.wikipedia.org/wiki/Audio_Stream_Input/Output
