get back contacts, mms, notes, etc after update

updated iphone4 to ios5 with redsn0w, jailbroke with Cydia, unlocked with Ultrasn0w so I can contine using with Tmobile.

I did back it up before making changes but cannot figure out how to get contacts, mms, notes, etc back on

Please help
