This is for UK based customers on O2.
My contract with o2 using a sony ericsson K850i runs out on may 19th. If i was to get an iphone then, would they swap that iphone for the new iphone when it is released as it would most likely be under a month old.

Or should I just wait that extra month and get the new one straight up.

Cheers

Almost certainly they will not swap it. No-one knows if there will be an upgrade deal yet, but most likely it will only apply if you've owned the phone for a certain amount of time (I personally think it'll be at least 10-12 months). Just wait.

At this point, I'd wait and not deal with the hassle of swapping and also the risk of not being able to swap. What happens if apple unveils a new phone but you won't see it in stock for a week or two (or three) You'll be out of luck at this point.

Seeing it announced at WWDC ≠being able to buy it.

As others have said, absolutely do not get an iPhone until the new one comes out - because it may come out in July or even later. Have patience - only get one if your current phones breaks.
