Im not sure if this is possible, but I wanted to be sure before I proceed.

I had to update to ios9 on my iphone. I have a backup on my computer from my last backup. Now, I set my phone up as new, but then realized there are certain apps (old versions) that I have on my backup. Is there a way to just transfer some of the old apps and photos I have on my backup to my "new" phone, without actually backing up? Before I updated, my phone had over 6gb in the "other data" category, and I just dont want all the possible clutter and storage use as I would rather just have a few old apps and photos on my backup.

Is this possible? If not, I was thinking about restoring from the backup, then saving the apps I wanted to icloud, then setting up the phone as new again (to not have all that junk taking space), then getting those apps from icloud. Please tell me if I am thinking right here.
