Getting default Contacts and Calendar to stick

I have a Microsoft Exchange account as my only email account on my iPad and iPhone. I’d like to use the Exchange calendar and contacts as the defaults for adding new calendar entries and contacts. I’ve set these as the defaults in iOS settings but they randomly switch back to the iCloud calendar and contacts, sometimes twice a day.

Does anybody know why this is or how to fix it? iPhone is on 14.6 and iPad 14.7b3.
