Contacts and Photos: yes, you can store them on the icloud. Check icloud settings.
text messages: not possible, but you can install a third party app that lets you import text messages to your computer.

If you don't want apps, music, videos, etc to be restored on your new phone, the simplest thing may be to delete them all from your current phone right before you perform one final backup. When you set up your new phone, it will default to restoring from the last backup that was performed.
