I've had a problem where the latest update to iOS deleted loads of my photos..... Apple's answer "well just download them off Facebook again" - without even checking I have Facebook, or have uploaded them to there.

After a bit of arguing, they've told me to restore an old backup to my iPhone, re-import them to may mac off there, and then restore my phone to its current state. However this renders my only phone useless for quite a long period of time, so is there anyway I can restore the backup to an iPhone simulator/virtual machine instead?
 
Do you have recent backup stored? if so, you can use iExplorer or iCopyBot - load the backup and extract photos.
