I do not want the Up Next option to display things that I have previously watched. I went into the settings and the only thing I see is under the Home Screen I switched it from Up Next to What to Watch. Even with this change it still shows me Up Next. Is there some other setting that I am missing?

That just changes the top row on the home screen.
I don’t believe you can disable the up next within the app itself.
Well at least that’s the case with Apple content anyway.
You can however remove the third party connected to tv services, I’m not sure however if this stops watched content appearing in Up Next though.

if there are certain things you don't want to see, you can remove items with a long press and "remove from up next" but you do have to do it one by one.

helpful if you've watched a bit of a show and decide you don't like it.

I love up next, since I can just go there to see if new episodes of shows are available, without having to go into multiple apps.

The problem is, if I watch a movie it might sometimes display a graphic in the Up Next that may not be the best thing for my kids to see. I watched a scary movie on Amazon Prime (I think) and it had some graphic with with the monster displaying right there...
