so I already have the series 6 Apple Watch and I’m planning on getting the iPhone 12 when it comes out. Since I have the cellular version of the Apple Watch activated right now what will I have to do with my new iPhone 12 to make sure the cellular capability still works with my iPhone 12?

You don’t have to do anything. during setup of the new phone you will be asked if you want to move the watch from your old iphone to your new one.

I’ve had mixed success with that, but if it doesn’t work you can always manually unpair the watch from the old phone and then pair it to the new phone. the watch has it‘s own cellular activation/phone number, and it will automatically hook up to your new phone when the process is complete.
 
So just unpair my watch from my old iPhone and then pair with the new iPhone 12?
 
Again as @cmaier indicated above during the initial setup of your new iPhone the update tool will offer to migrate your watch to your new iPhone.

But if you really want to do it manually then yes you will need to unpair from your old iPhone and then pair to your new iPhone 12. Note: your watch's cellular plan is stored on your iPhone that is paired to your watch. So when you unpair your watch a backup of your watch is stored on your current iPhone.

Do you plan to allow the Apple iPhone 12 Setup tool to move all your current iPhone information to your new iPhone 12?
