I have a cracked screen on my iPhone 5S which i use as a spare phone.

There are plenty of shops that do screen replacements near me. Is it best to delete everything on my phone i.e banking/shopping/social media apps, pictures etc.

The last thing i want is someone snooping on my stuff and using my personal information for banking etc.
 
Of course. Do a complete iTunes backup (encrypted) if possible. Then restore as new. Anytime you take a phone in for repair or service you should do this.
Simply restore when it is repaired.

When i do a iTunes backup/restore, Would that also make a copy of my settings, phone contacts, screen layout, passwords etc ?
 
Be sure to select the encrypted option. It will then backup everything including passwords etc. Nothing to it...
