So I've had my iPhone 4 since it was released (over 2 years now) and over time and IOS upgrades it seems to be sluggish / not the greatest.

Since it will be a while before a new phone comes out I wanted to reset it back for a fresh start and also to get rid of more than half of my apps that I never use.

I'd really like to keep my photos and music, but is there any way to keep all of my saved texts or will they erase ?

What's the best way to back up what I need and start fresh ?

Do a full backup to iTune, and reset it.
 
To avoid losing your texts and such, the only way I can think off is plugging your phone into iTunes, unticking everything (music, apps, videos, etc), sync/back up, and then select the things you'd like to re-sync.
I guess it's not the most time efficient way, but you won't lose you messages/contacts/notes.
