I was trying to find out how to change gmail app notification tone in the link above but I couldn't find the instruction that apply to IOS 14.5.1 on my iphoneX
Is it doable on iphone ?

Changing notification tones for apps like that is one of the reasons I like having a jailbreak. Perhaps in the future Apple will introduce this "amazing new feature".
