Go from 4 (4.3.3) to 4S (5.0.0) transfer/backup, help please

I didn't update my current 4 from 4.3.3 to 5.0 yet because I plan on unlocking it for someone. My 4S comes in today and I wanted to get some advice how I can transfer my current apps (mainly such apps that were pulled from the app store and not available in the cloud, ie: VLC), photos, well, everything from the 4 to 4S. I can't set up the 4S with a backup from the 4 can I? I'm pretty sure that's a no go.

Synch your iPhone 4 with iTunes. "Transfer Purchases".
All your Apps should then be in iTunes.
