I'm running preview installed with bootcamp and VMware fusion. I am a recent Mac convert and didn't want to buy Win7 knowing Win8 was coming. I have special purpose software that only runs on Win - and sometimes doesn't function well under VMware.

I understand that I need the system builder version since I'm not upgrading from another Win version.

If I create a new bootcamp partition, can I delete the Preview one when I'm ready?
Anything else I need to consider?

Bootcamp will...

Bootcamp will only allow one partition. Probably you can overwrite the partition with the final release by inserting the USB/DVD while booting your bootcamp partition?

Honestly I would consider Windows 7 instead of Windows 8 since you don't have a touch interface. Windows 7 is a much better OS IMO.

Yes, you could use Boot Camp Assistant to install Windows 8 unsupported, and delete the VM.
