Feeling pretty excited, I plan to first use my USB drive and save the disk restore program on it, then pop in my SSD drive, boot from USB and load OSX on my ssd.

Question I have: When I boot my from my usb to the disk utilities, will it give me an option to format the drive and set it for OSX? Because currently it has windows 8 on it and I would like to just format it after it's in the mac while installing OSX.
 
yeah. when you boot into the Usb install drive it will have disk utilities as an option (and it should be on the drop down menu).

Also, if anything goes wrong, I can just pop the old HDD back in and it will be fine?
